Tu Tierra’s chefs introduce patrons to authentic Mexican food to show them that it’s very different from the Tex-Mex cuisine popular throughout the United States and Canada. They develop piquant moles and pour them over chicken enchiladas, smother pork chops in a creamy chipotle and cilantro sauce, and stuff burritos with fish, scallops, crab, and shrimp. They also cater to vegetarians with such options as enchiladas rancheras packed with veggies.
Because it’s tough to find such authentic tastes outside of Mexico, Tu Tierra’s location—in a strip mall along Fairmont Drive—might really come as a surprise. The restaurant stands out among its neighbors, though, thanks to a three-tiered circus-tent-like sign out front, which is easily spotted by travelers and skydivers who get hungry while floating back to earth.
